Traditional Spanakopita (Greek Spinach Pie)

A classic for a reason! One bite of our traditional Spanakopita, and you’ll understand.

Ingredients:

  • 500g fresh spinach, washed and chopped
  • 1 leek, finely chopped
  • 4 spring onions, finely chopped
  • 1 bunch fresh dill, chopped
  • 200g feta cheese, crumbled
  • 2 eggs, beaten
  • 2 tbsp olive oil
  • Salt & pepper, to taste
  • 6-8 sheets of phyllo pastry
  • 50g melted butter or extra olive oil (for brushing)

Instructions:

1. Prepare the filling:

  • Heat olive oil in a pan and sauté leek and spring onions until soft.
  • Add the chopped spinach and cook for 2-3 minutes until wilted.
  • Remove from heat and let cool slightly.

2. Mix the ingredients:

  • In a bowl, combine the spinach mixture, crumbled feta, chopped dill, and beaten eggs.
  • Season with salt & pepper (keep in mind feta is salty).

3. Assemble the pie:

  • Preheat oven to 180°C.
  • Brush a baking dish with melted butter or olive oil.
  • Layer 3-4 phyllo sheets, brushing each one lightly with butter.
  • Spread the spinach filling evenly over the base.
  • Cover with the remaining 3-4 phyllo sheets, brushing between layers.
  • Score the top lightly with a knife.

4. Place in the oven and bake for 35-40 minutes, or until golden brown and crispy.

5. Let cool for 5-10 minutes, then cut into squares and enjoy warm!
