Ingredients
- 1 fresh salmon fillet
- 1 cup jasmine or sushi rice
- 1 avocado, sliced
- ½ cucumber, sliced
- 1 small carrot, grated
- 1 tbsp sesame seeds
- Soy sauce
- Sriracha mayo
- 1 lime
- Olive oil, salt & pepper
Instructions
1️⃣ Cook the rice according to the package instructions.
2️⃣ Season the salmon with salt, pepper, and a little olive oil.
3️⃣ Pan-sear the salmon until crispy on the outside and tender inside.
4️⃣ In a bowl, add rice, salmon pieces, avocado, cucumber, and carrot.
5️⃣ Drizzle with soy sauce and sriracha mayo.
6️⃣ Finish with sesame seeds and a squeeze of fresh lime.
