Ingredients:
- 4 boneless, skinless chicken breasts
- 1 orange (zested and juiced)
- 1 lemon (zested and juiced)
- 3 tbsp olive oil
- 2 garlic cloves (minced)
- 1 tsp honey
- 1 tsp dried oregano
- ½ tsp paprika
- Salt and pepper
- Fresh parsley for garnish (optional)
Instructions:
- Prepare the Marinade:
- In a bowl, whisk together orange juice and zest, lemon juice and zest, olive oil, minced garlic, honey, oregano, paprika, salt, and pepper.
- Marinate the Chicken:
- Place the chicken breasts in a shallow dish.
- Pour the marinade over the chicken, ensuring it’s evenly coated.
- Cover and refrigerate for at least 1 hour, or up to 8 hours for deeper flavour.
- Preheat the Grill:
- Heat your grill or grill pan over medium-high heat.
- Lightly oil the grates to prevent sticking.
- Grill the Chicken:
- Remove the chicken from the marinade and let excess marinade drip off.
- Grill the chicken for 5–7 minutes per side, or until it reaches an internal temperature of 75°C.
