Ingredients:
• 500g chicken breast, thinly sliced
• 2 tbsp olive oil
• 1 red bell pepper, sliced
• 1 yellow bell pepper, sliced
• 1 green bell pepper, sliced
• 1 onion, sliced
• Juice of 1 lime
• 1 tsp smoked paprika
• 1 tsp ground cumin
• ½ tsp garlic powder
• Salt & pepper to taste
Method:
- Marinate the chicken in olive oil, lime juice, paprika, cumin, garlic powder, salt, and pepper. Let sit for 15–20 minutes.
- Sauté the veggies in a hot pan until charred and soft. Remove and set aside.
- Cook the chicken in the same pan until golden and fully cooked.
- Combine chicken and veggies, toss together for 1–2 minutes.
- Serve hot in warm tortillas with your favourite toppings—think avocado, sour cream, or salsa.
