
A classic for a reason! One bite of our traditional Spanakopita, and you’ll understand.
Ingredients:
- 500g fresh spinach, washed and chopped
- 1 leek, finely chopped
- 4 spring onions, finely chopped
- 1 bunch fresh dill, chopped
- 200g feta cheese, crumbled
- 2 eggs, beaten
- 2 tbsp olive oil
- Salt & pepper, to taste
- 6-8 sheets of phyllo pastry
- 50g melted butter or extra olive oil (for brushing)
Instructions:
1. Prepare the filling:
- Heat olive oil in a pan and sauté leek and spring onions until soft.
- Add the chopped spinach and cook for 2-3 minutes until wilted.
- Remove from heat and let cool slightly.
2. Mix the ingredients:
- In a bowl, combine the spinach mixture, crumbled feta, chopped dill, and beaten eggs.
- Season with salt & pepper (keep in mind feta is salty).
3. Assemble the pie:
- Preheat oven to 180°C.
- Brush a baking dish with melted butter or olive oil.
- Layer 3-4 phyllo sheets, brushing each one lightly with butter.
- Spread the spinach filling evenly over the base.
- Cover with the remaining 3-4 phyllo sheets, brushing between layers.
- Score the top lightly with a knife.
4. Place in the oven and bake for 35-40 minutes, or until golden brown and crispy.
5. Let cool for 5-10 minutes, then cut into squares and enjoy warm!
