Vasilopita (New Year’s Cake)

Ingredients

For the Cake:

  • 2 ½ cups (310g) all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 cup (225g) unsalted butter, softened
  • 1 ¾ cups (350g) granulated sugar
  • 4 eggs
  • 1 tbsp vanilla extract
  • Zest of 1 orange and 1 lemon
  • ½ cup (120ml) freshly squeezed orange juice
  • ½ cup (120ml) milk or yogurt

Don’t forget the coin wrapped in foil.

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 175°C (350°F).
    • Grease and flour the cake pan.
  2. Prepare the Batter:
    • In a medium bowl, mix the flour, baking powder, and salt.
    • In a large bowl, cream together the softened butter and sugar until light and fluffy.
    • Beat in the eggs one at a time, then add the vanilla extract, orange zest, and lemon zest.
    • Gradually add the dry ingredients to the wet ingredients, alternating with the orange juice and milk (or yogurt). Mix until just combined.
  3. Add the Coin:
    • Wrap a coin tightly in foil and fold it into the batter.
  4. Bake the Cake:
    • Pour the batter into the prepared pan and smooth the top.
    • Bake for approximately 45–55 minutes.
    • Allow the cake to cool for 10–15 minutes in the pan, then invert onto a wire rack to cool completely.
  5. Decorate:
    • Dust generously with powdered sugar to create a snowy effect.
    • Arrange tangerine slices or candied orange on top.
