Ingredients
For the Cake:
- 2 ½ cups (310g) all-purpose flour
- 2 tsp baking powder
- ½ tsp salt
- 1 cup (225g) unsalted butter, softened
- 1 ¾ cups (350g) granulated sugar
- 4 eggs
- 1 tbsp vanilla extract
- Zest of 1 orange and 1 lemon
- ½ cup (120ml) freshly squeezed orange juice
- ½ cup (120ml) milk or yogurt
Don’t forget the coin wrapped in foil.
Instructions
- Preheat the Oven:
- Preheat your oven to 175°C (350°F).
- Grease and flour the cake pan.
- Prepare the Batter:
- In a medium bowl, mix the flour, baking powder, and salt.
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then add the vanilla extract, orange zest, and lemon zest.
- Gradually add the dry ingredients to the wet ingredients, alternating with the orange juice and milk (or yogurt). Mix until just combined.
- Add the Coin:
- Wrap a coin tightly in foil and fold it into the batter.
- Bake the Cake:
- Pour the batter into the prepared pan and smooth the top.
- Bake for approximately 45–55 minutes.
- Allow the cake to cool for 10–15 minutes in the pan, then invert onto a wire rack to cool completely.
- Decorate:
- Dust generously with powdered sugar to create a snowy effect.
- Arrange tangerine slices or candied orange on top.
