Creamy Lemon Burrata Pasta with Roasted Garlic & Crispy Prosciutto

All you need is fresh ingredients from Prinos.

🛒 INGREDIENTS (FROM PRINOS):

  • Pasta (tagliatelle or pappardelle)
  • Burrata
  • Prosciutto
  • Cherry tomatoes
  • Whole garlic bulb
  • Lemon zest + juice
  • Olive oil
  • Fresh basil
  • Parmesan
  • Butter
  • Chili flakes

👩‍🍳 METHOD:

Step by Step

  1. Roast the garlic

Cut the top off the garlic bulb, drizzle with olive oil, wrap in foil, and roast until soft.

  1. Roast the tomatoes

Add cherry tomatoes to a tray with olive oil, salt, pepper, and a little garlic. Roast until blistered and juicy.

  1. Crisp the prosciutto

Place prosciutto slices in a pan or oven until crispy. Let them cool, then break into pieces.

  1. Cook the pasta

Boil pasta until al dente. Keep some pasta water before draining.

  1. Make the sauce

In a pan, melt butter with roasted garlic. Add lemon zest, lemon juice, and a splash of pasta water.

  1. Toss everything

Add pasta to the sauce. Mix until glossy and creamy. Add parmesan and more pasta water if needed.

  1. Plate it

Serve pasta in a bowl. Add roasted tomatoes, crispy prosciutto, and burrata on top.

  1. Finish

Drizzle olive oil, add basil, chili flakes, black pepper, and extra parmesan.
