Homemade Chili Taco Bowl

Ingredients

For the chili:

  • 500g ground beef
  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 red pepper, chopped
  • 1 green pepper, chopped
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • ½ tsp chili powder (or more, if you like it spicy)
  • 1 tsp dried oregano
  • 1 tbsp tomato paste
  • 1 can chopped tomatoes (400g)
  • 1 can kidney beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • Salt and pepper to taste
  • A pinch of sugar (optional)

For the toppings:

  • Sour cream
  • Crushed tortilla chips
  • Jalapeño slices
  • Fresh coriander
  • Ripe avocado, sliced
  • Lime wedges

Instructions

Cook the base:
Heat the olive oil in a deep pan. Add the onion and garlic.
Sauté until soft and fragrant.

Add the meat and spices:
Add the ground meat and break it up with a spoon. Cook until browned.
Stir in the cumin, paprika, chili powder and oregano.

Build the flavour:
Add the peppers, tomato paste and canned tomatoes.
Let everything simmer for about 15 minutes.

Finish the chili:
Add the kidney beans and corn.
Simmer for another 10–15 minutes until thick and rich.
Season with salt, pepper and a little sugar if needed.

Time to serve:
Spoon the chili into bowls (or warm taco shells).
Top with sour cream, avocado, tortilla chips, jalapeños, and a squeeze of lime.
Finish with fresh coriander for extra flavour.
