How is it September already! It seems like 2023 has raced past in a flash and with the summer heat finally cooling, we thought we’d go for a recipe that offered a bit of autumnal comfort to welcome in the new season. So this month we’re learning to cook a delicious and healthy turkey chili, all made using the fantastic range of premium products from our high-end shop.
Chili is a great meal that the whole family can enjoy. It makes a great evening meal combined with rice, or another grain of choice. And if you have leftovers, it makes for a great lunch the next day as well! What’s more, you can make an extra big batch of chili and pop a couple of portions in the freezer for an easy weekday meal when to defrost when you don’t have time to cook. And not only is it packed full of goodness, with plenty of fresh vegetables and legumes, but it’s also delicious and bursting with flavour.
The star of the show here is the turkey – not the usual choice for a chili, but this light meat is actually a nutritional powerhouse that offers a range of health benefits. Rich in high-quality protein, turkey is an excellent choice for promoting muscle growth, repair, and overall tissue health. It’s a lean meat option, low in saturated fat, making it heart-friendly and conducive to maintaining a healthy weight.
Turkey is also a great source of essential nutrients such as B vitamins (particularly B3 and B6), selenium, and phosphorus, which play pivotal roles in energy metabolism, immune function, and bone health. The tryptophan content in turkey contributes to the production of serotonin, a neurotransmitter that regulates mood and promotes a sense of well-being.
So now that we have a low-down on the nutritional benefits of the primary ingredient in this tasty recipe, let’s get into the specifics of how to cook it up in your own kitchen.
INGREDIENTS
- 2 tablespoons olive oil
- 1 yellow onion
- 1 avocado
- 3 cloves of garlic
- 1 red bell pepper
- 1 bunch coriander
- 1 pound of ground turkey
- 4 tablespoons of chili powder
- 2 tablespoons ground cumin
- 1 teaspoon dried oregano
- ¼ teaspoon cayenne pepper
- Black pepper
- 1/2 teaspoon sea salt
- 1 can crushed tomato
- 1 ¼ cups chicken stock
- 2 cans kidney beans
- 1 can sweetcorn
- Grated cheese
- sour cream
- White rice
METHOD
- First place a large pot over a medium heat and add the oil. Once the pot has heated up add in the onion, garlic and red pepper and cook for around 5 minutes, stirring often.
- Next mix in the ground turkey, breaking it up as you stir. Continuously stir until the meat is not pink anymore, then add in the chili powder, cumin, oregano, cayenne pepper and salt. Stir everything together for 20 seconds.
- Now stir in the tomatoes, chicken broth, kidney beans and corn. Bring it all to the boil then reduce the heat and let simmer for around 30 minutes.
- While the chili is simmering, cook the white rice and prepare the toppings.
- Once the chili has thickened up nicely, turn off the heat, taste and season accordingly.
- Serve up in a bowl on top of a serving of white rice, add the chopped avocado, sour cream, grated cheese and parsley and enjoy.
