But to add some inspiration to your kitchen adventures, we’re sharing one of our favourite summer salad recipes, that makes the more of the fresh products available at our high-end grocery shop. And this refreshing frisee, strawberry and avocado salad is both bursting with delicious flavours, as well as being packed full of nutritional value. Crunchy and creamy in equal measure, this salad is the perfect way of consuming fresh, local, seasonal products from Prinos Farm&Deli.

The main character in this salad is the frisee lettuce, which is more popularly used as a garnish. Here this curly green leaf takes centre stage, and what a performance it gives. Combining a mild, nutty flavour and sharp taste with a wealth of nutrients and benefits, frisee is rich in iron, fibre, potassium, manganese, copper, and Vitamins A, B, C and K. METHOD

  1. Start by preparing the dressing. Mix all the dressing ingredients together in a blender until smooth, then set aside.
  2. Next finely chop the frisee in a bowl, then chop and add the strawberries, avocado, corn, sliced red onion and pistachios to the bowl with the frisee.
  3. Now add the dressing and give the salad a gentle toss to combine.
  4. Finally top the salad with the crumbled feta and serve.
